Tex-Mex Latkes

Tex-Mex Latkes

  • vegetable oil for frying
  • 2 large eggs (separated)
  • ½ cup onions (finely chopped)
  • 2 garlic cloves (minced)
  • 1 cup corn
  • 2 green onions (chopped)
  • 1 tsp ground cumin
  • 1 tsp dill (finely chopped)
  • 3 tbsp red pepper (finely chopped)
  • 3 tbsp green pepper (finely chopped)
  • 1 tbsp ginger (grated fresh)
  • 1 tsp fresh cilantro
  • 1 tbsp fresh cilantro
  • ½ tsp Baking powder
  • ½ cup flour
  • black pepper to taste
  • salt to taste

Caliente Sour Cream

  • 1 cup sour cream
  • ½ tsp garlic powder
  • ½ tsp chile powder
  • ¼ tsp ground cumin
  • ¼ tsp white pepper to taste
  • ¼ tsp salt to taste
  1. Mix together all ingredients (not including ingredients for sour cream) except egg whites and oil.
  2. Beat whites at high speed with electric mixer until stiff and fold into corn mixture
  3. Heat oil in large skillet and spoon batter by tablespoons into oil.
  4. Fry until golden brown on each side and drain on paper towels.
  5. Serve with Caliente Sour Cream.
