New York Cheesecake

Crust

  • 1 ½ cups vanilla wafer cookies or graham cracker crumbs
  • 6 tbsp butter (melted)
  • ¼ cup granulated sugar

Filling

  • 1 lb cream cheese
  • ¼ cup granulated sugar
  • 3 large eggs
  • ½ tsp grated lemon rind
  • 1 tsp vanilla extract

Sour Cream Topping:

  • 1 cup sour cream
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  1. Preheat oven to 350 F.
  2. In a large mixing bowl, beat together the cream cheese and sugar until light
    and fluffy
  3. Add the eggs, one at a time, beating thoroughly after each one.
  4. Add the lemon rind and vanilla, then mix briefly.
  5. Pour the mixture into the prepared crust and bake for about 55 minutes or until center is firm to the touch. Remove the cake from the oven. Adjust the oven temperature to 450 F.
  6. Prepare the sour cream topping by gently stirring together the sour cream, sugar, and vanilla. Spread this mixture over the top of the cake.
  7. Place the cake back into the oven and bake for 8-10 additional minutes or until the topping has set. Remove the cake from the oven and cool to room temperature. Chill until ready to serve.
