


Tex-Mex Latkes
Ingredients
- vegetable oil for frying
- 2 large eggs separated
- ½ cup onions finely chopped
- 2 garlic cloves minced
- 1 cup corn
- 2 green onions chopped
- 1 tsp ground cumin
- 1 tsp dill finely chopped
- 3 tbsp red pepper finely chopped
- 3 tbsp green pepper finely chopped
- 1 tbsp ginger grated fresh
- 1 tsp fresh cilantro
- 1 tbsp fresh cilantro
- ½ tsp Baking powder
- ½ cup flour
- black pepper to taste
- salt to taste
Caliente Sour Cream
- 1 cup sour cream
- ½ tsp garlic powder
- ½ tsp chile powder
- ¼ tsp ground cumin
- ¼ tsp white pepper to taste
- ¼ tsp salt to taste
Instructions
- Mix together all ingredients (not including ingredients for sour cream) except egg whites and oil.
- Beat whites at high speed with electric mixer until stiff and fold into corn mixture
- Heat oil in large skillet and spoon batter by tablespoons into oil.
- Fry until golden brown on each side and drain on paper towels.
- Serve with Caliente Sour Cream.
