Tex-Mex Latkes

Servings 24 mini-latkes

Ingredients
  

  • vegetable oil for frying
  • 2 large eggs separated
  • ½ cup onions finely chopped
  • 2 garlic cloves minced
  • 1 cup corn
  • 2 green onions chopped
  • 1 tsp ground cumin
  • 1 tsp dill finely chopped
  • 3 tbsp red pepper finely chopped
  • 3 tbsp green pepper finely chopped
  • 1 tbsp ginger grated fresh
  • 1 tsp fresh cilantro
  • 1 tbsp fresh cilantro
  • ½ tsp Baking powder
  • ½ cup flour
  • black pepper to taste
  • salt to taste

Caliente Sour Cream

  • 1 cup sour cream
  • ½ tsp garlic powder
  • ½ tsp chile powder
  • ¼ tsp ground cumin
  • ¼ tsp white pepper to taste
  • ¼ tsp salt to taste

Instructions
 

  • Mix together all ingredients (not including ingredients for sour cream) except egg whites and oil.
  • Beat whites at high speed with electric mixer until stiff and fold into corn mixture
  • Heat oil in large skillet and spoon batter by tablespoons into oil.
  • Fry until golden brown on each side and drain on paper towels.
  • Serve with Caliente Sour Cream.
