Over medium heat, melt 2 tbs of ghee, add 1 cup semolina and sauté until golden brown
Add 3 cups water, or 1 ½ cups water and 1 ½ cups 2% (or richer) milk for a creamier consistency
Stir over medium heat until combined
Add 1 cup sugar, stir until mixture thickens to a fairly dry but smooth consistency
When thickened add 1/2 tsp of cardamom and 1/4 tsp nutmeg and combine
Take off heat and let cool, stirring occasionally to keep bottom from burning
Optional : add slivered almonds or pistachio’s to garnish
